Cortes de Cima Olive Oil 2011
100% Cobrançosa. Maximum Acidity: 0.1%
20.000 bottles (50cl)
A harmonious olive oil, with a deep greenish yellow color and a green grassy aroma typical of the ‘Cobrançosa’ variety. It shows a lightly piquant and nutty flavor at the end, due to the early harvesting of the fruit.

Harvesting Olives at Cortes de Cima with hand held mechanical harvesters and a quad bike. Our olives are harvested early while still green, for better quality olive oil. Polyphenol content is higher in oils pressed from less ripe fruit, and free fatty acids are extremely low at 0,2% FFA.
Last weekend, we were in Évora to launch Chef Nobre’s cookbook, “Entre Coentros e Poejos”. Which is also being offered in a 3/pack set including 1 bottle of Cortes de Cima Olive Oil and 1 bottle of Chaminé tinto.
