Stone Oven baked Bread

Posted by Carrie on Saturday July 26th, 2008 at 15:51

"Terras de Pão, Gente de Paz .” – The official moto of our region – as testified by signboards posted at many a town and village entrance. Can be loosely translated as – "Land of Bread, People of Peace".

The art of breadmaking in stone ovens, heated with olive branches, is still alive in the towns and villages, where some (but not many) bakers still even knead the sourdough bread by hand. It is a tradition passed down from mother to daughter. There is a bakery in Vidigueira, where 4 generations of females are still involved in the family business! As the art is dying away in many areas of the country, Vidigueira´s stone oven bread is reknown as far as Lisbon.
